Chocolate, orange and Dochus mousse
This velvety dessert brings together the sumptuously smoky flavour of Glen Dochus and the bittersweet tang of smooth dark chocolate. Serve it with a robust after-dinner coffee and an extra dram or two.

Ingredients
- 170g quality dark chocolate
- 2 tablespoons Glen Dochus
- 60g caster sugar
- 300ml double cream
- 3 eggs
- 1 teaspoon gelatin
- Juice from 1 orange
- 5 tablespoons water

Step 1
Put the dark chocolate and water in a pan and stir over a gentle heat until the chocolate melts completely.

Quickly beat the eggs and sugar together in a bowl.

In a measuring jug, mix the gelatin and orange juice and stir till dissolved. Then add your aromatic Glen Dochus.

Fold the chocolate and egg mixtures together, followed by the orange and gelatin mix.

Whip the double cream until it starts to stiffen, then fold half of it into the chocolate mix.

Spoon the smooth blend into individual glass bowls and decorate with the remaining cream.
